I love a red carpet night. It's tradition while watching this (Golden Globes) red carpet I make my homemade lasagna. Then, during the Golden Globes I enjoy a glass or two (whatever....probably 3) of Cabernet, a big slice of lasagna and garlic bread. I'm not sure why, but cold weather+comfort food+red carpet+red wine+awards shows=a great night for me.
But.....
Not tonight. My tradition is broke. Well, it's all going on except the part about the lasagna [insert sad face]. On the other hand...I made a new dish [insert happy face]. With CHEESE. WINNING! It's a healthy version on one of my very, very favorite sandwiches from my favorite city in the USA. I've been looking for 21 Day Fix approved recipes and this is what I came up with.
Healthy Philly Cheesesteak
2 large green bell peppers
2 T olive oil
3 cloves garlic, minced
1/2 red bell pepper, diced
1/4 tsp black pepper
1 medium yellow onion, chopped
steak, thinly sliced
1 tsp Worcestershire sauce
2 slices Provolone cheese
Instructions
- Preheat oven to 400 degrees and spray an 8x8 baking dish, set aside. (I used a loaf pan)
- Bring a pot of water to a boil.
- Slice green peppers in half, remove seeds and ribs and place them int he boiling water for 3-5 minutes until they are tender. Remove peppers from the water (be careful!!) Place cut side down on a towel and let water drain. (YES, DRAIN THEM)
- In a 12" skillet, heat olive oil on medium. Add garlic, onion, red bell pepper, & pepper. Saute 4-5 minutes until onions are translucent.
- Add steak slices and Worcestershire sauce and cook until meat is cooked to your liking.
- Place green peppers open side up in your baking dish. Fill each pepper with 1/2 slice of Provolone and the with meat mixture until they are overflowing. Top with other 1/2 of the cheese.
- Bake in oven for 10 minutes until cheese is golden brown.
- EAT
Enjoy! Make it your own if you like mushrooms, add them. I didn't add any greek yogurt (healthy) or sour cream (oh yes) but that would totally top it off.
